Curry Crab and Dumpling - Caribbean Styling!!!

Curry Crab and Dumpling is a huge Caribbean favorite its right up there with Palau , Roti and Callaloo , especially if your a Trini like me ! This meal is a almost any time kinda dish "hint hint" almost any time if yuh drinking heavy alco , sipping on bailey's or any milk base drink yuh might want to stand down from curry on ah whole. Besides that we Trini's love this dish on ah Tobago beach lime or just liming in Trinidad with yuh Friends. No matter what's your culture this dish is hmm hmm good , try it you might like it! Easy to follow recipe below


First the Crab is most important I understand that everyone preps crab differently, so you can prep as your accustomed because the key to a boss curry crab is how you season and boil down that gundy!

Seasoning for crab (what I used) -I usually use this seasoning amount for 6 small crabs

seasoning pepper / pimento cut finely

5 leaves chive chopped finely

5 peg Garlic chopped fine

6 leaves Shado beni diced small

1 sm piece Ginger chopped fine

2 btsp vinegar or lime

Note: you could put all the ingredients above into the blender)

Salt to taste -my moms always says you can put it in but can't take it out so be careful there's a lot of flavors in this dish naturally.

And finally some Curry ! You'll add more when its time to curry down the crab but cooking the crab with a little curry first ensures you get the real curry experience! boil in water in pot with lid for about 20 mins or until the water is almost dried out.



Dumplings

you can work on your dumplings while the crab is boiling (everyone knows how to make dumplings but just in case)

2 cups of Flour

1 Tbsp of Sugar

1/2 Tsp of Salt

Mix ingredients together and kneed into dough , place pot with water and 1 tbsp of oil on the stove and bring to a boil . Separate dough into small balls and use the palm of your hands to flatten the dough, the trick is to get the dough as flat as possible so that it looks like the one of the left and not the right. you want it to be easy to dig into with your spoon and not too hard. when the water is boiling place the flatten dough into the water when the dumpling floats to the top its ready.



Curry Crab Time!

So this might be"old people thing" but I still do it : place a crushed garlic to burn in a pot of oil

Next in a glass bowl put 3 tbsp of curry and 1/2 tsp of saffron / turmeric, when the garlic is burnt throw in the curry and saffron and stir, your basically burning the curry a little.

Then throw in your crab and stir, when its all tossed up leave on medium heat to take in color and flavor. I usually add some diced potatoes about three however this is optional and many people might prefer their dish without. When the potatoes and crab look colored then I half the pot with water just enough to cover the crab.


I like to add a little bit of this seasoning you can use any all purpose seasoning you prefer, just remember to taste then add don't want it coming out salty! I also add some butter and place a punctured red pepper on top and let cook for about 25 mins, you'll know when to check it " sniff sniff smell gooooooood!
